Apple and Pear Cake with Acorn Flour
A simple tray bake for a quick treat. In this recipe, fruity apples and pears are combined with aromatic acorn flour. As acorn flour is gluten-free, this recipe is the perfect base for a delicious and easily digestible cake.
Ingredients
- 1 and ¾ cups medium-coarse flour
- 1/4 cup acorn flour
- 1.5 tsp baking powder
- 1 cup of sugar (or more or less to taste)
- 1 packet vanilla sugar
- Cinnamon
- 2 eggs
- 1 cup of milk
- 1/2 cup of oil
- Fruit, as available
Baking time: 30–40 mins
Preparation time: approx. 20–30 mins
Preparation:
– Grease a baking tray and dust with flour
– Preheat the oven to 180 degrees (fan) or 200 degrees (top and bottom heat)
- Mix everything together and place on a baking tray.
- Bake until it smells lovely and is lightly browned on top.
- For a variation, add poppy seeds to the batter and spread jam over the cake.
- It can be dusted with icing sugar.
