Vegan cake with apples or oranges, sea buckthorn and acorn flour

If you fancy a cake that’s healthy, looks delicious and combines autumn fruits with sea buckthorn, then give this a go. It contains no eggs, so it’s vegan.

Ingredients

  • 1 and 1/2 cups of wheat flour
  • 1/2 cup acorn flour
  • 1 cup of cane sugar
  • 3 tablespoons carob or cocoa
  • 2 teaspoons baking powder
  • a pinch of salt
  • 2 cups hot water
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon of cardamom
  • 1/2 teaspoon gingerbread spice
  • ¾ cup of oil
  • 2 tablespoons apple cider vinegar
  • Apples or oranges
  • Sea buckthorn
  • Agar-agar or fish gelatine

Cooking time: 45 mins

Preparation time: approx. 15–20 mins

Preparation:

– Line a baking tray with baking paper

– Preheat the oven to 180 degrees

  1. Sift all the main ingredients into a bowl and mix together.
  2. Add the oil, water and apple cider vinegar, stir to combine, then pour into a baking dish lined with baking paper.
  3. Arrange apple slices or orange segments on top.
  4. Bake at 180 degrees for approx. 45 minutes.
  5. Then add the sea buckthorn mixed with honey and cover with the gelatine.
