Arabinitol occurs as a sugar-alcohol in the form of D- and L-arabinitol. These can also be detected in small amounts in serum and urine in healthy people. If there is an increased colonisation of yeasts in the small intestine, the concentration of D-arabinitol also increases. The reason for this is that only D-arabinitol is produced by Candida spp. such as Candida albicans, C. tropicalis and C. parapsilosis.

If the concentration of D-arabinitol increases, its ratio to L-arabinitol also changes.
Since the concentration of D-arabinitol in the urine is proportional to its concentration in the serum, the concentration of D-arabinitol in the serum and urine increases significantly when there is a heavy yeast load.
