Bitter substances
As the name suggests, bitter substances are all substances that have a bitter flavour. They are mainly found in plants such as bitter almonds, rocket or bitter oranges. The absorption of these substances leads to an increase in the secretion of gastric and bile juices. Unfortunately, bitter substances are increasingly being "bred out" of plants.
