Vitamin D is a fat-soluble "vitamin" that is endogenously synthesised from cholesterol. Due to its origin, synthesis and functions, it is related to steroid hormones. Part of the requirement is covered by photochemical synthesis of vitamin D in the skin. Human migrations from central Africa to the north led to the lightening of the skin and thus to a more "effective" use of UV rays. Nevertheless, the intensity of the sun in winter in Europe is not sufficient to cover the demand! The formation is also strongly dependent on the time spent outside, the time of day, the altitude and latitude, the season, the air pollution, the type of clothing, the pigmentation of the skin, the age, the cloud cover and the applied sunscreen (with permanent use of SPF 15, the vitamin D production is reduced by 99.5%).

In the EsKiMo study of the Robert Koch Institute and the University of Paderborn, the nutrient intake of children was examined. In the group of 6-11 year olds, 100% of the test persons were below the daily nutrient intake recommended by the German Nutrition Society. Studies on adults also show an undersupply of vitamin D - especially in the winter months.
