Fish collagen protein concentrate for healthy cooking
Gelatine is virtually indispensable in fine cuisine. It is almost impossible to create melt-in-the-mouth creams and cakes that are still firm enough to cut without it. Starch, as a thickening agent, has completely different properties, and even agar-agar or pectin do not produce the same refined consistency.
But there are also differences between the various types of gelatine. Standard beef gelatine sets much firmer, meaning dishes are nowhere near as tender. And pork gelatine is off-limits for Muslims, Jews and many other people who simply do not like pork.
Fish gelatine offers an ideal alternative here, as it is not only healthier but also, in terms of its culinary properties, of much higher quality than conventional gelatine. Premium fish gelatine is a purified protein concentrate derived from fish collagen. Collagen proteins are the most common protein structures found in humans and animals. Premium fish gelatine contains the complete amino acid profile of collagen; it is gluten-free, free from additives, and odourless and tasteless. It is also naturally cholesterol-free and virtually free from carbohydrates and fat. Furthermore, it is kosher and halal.
Raw Material Quality
Every production batch is tested for residues. Heavy metal levels are well below the limit. The same applies to microbiological contamination; for example, the product is guaranteed to be free from salmonella.
The raw materials used are 100% traceable. No opaque sources of raw materials from Asia are used; the raw material – fish skins – comes from European aquaculture. Whilst the product is, of course, not vegan, no fish need be killed solely for the production of this fish gelatine. The fish skins are exclusively a by-product resulting from the production of fish fillets, which takes place anyway.
Uses
Premium fish gelatine is well tolerated and can be used anywhere in the kitchen where gelatine is required. Heating it to over 80 ºC should be avoided, as this will cause it to lose its gelling ability. Furthermore, premium fish gelatine is an excellent ingredient for homemade protein and health shakes.
To enhance and enrich your daily diet, stir 1 tablespoon (approx. 10 g) of fish gelatine powder into approx. 200 ml of water, juice, almond, oat or rice milk, or into muesli, yoghurt or quark. Just like gelatine from other sources, fish gelatine powder can also be used to make jellies and custards. Follow the quantities specified in the recipe. Depending on the desired consistency, use between 15 and 30 g per litre of liquid.
Of course, fish gelatine can also be taken purely as a dietary supplement, and for many people it is more appetising than the products usually recommended for this purpose – namely gelatine powder derived from pigs and cattle in factory farming. However, consuming it in the form of tasty products – such as those from Verena Geistlich’s low-carb cookery – is certainly more enjoyable than taking powder mixed with water, whilst offering the same positive effects. We therefore generally recommend opting for this method of consumption!
