Healthy strawberry tart without baking
This strawberry cake is particularly well suited to a healthy coffee break. It contains no refined sugar and can optionally be made completely sugar-free. The cake is packed with protein and is therefore also a tasty reward after intense workouts. Thanks to the fish gelatine used, it is free from beef or pork gelatine and ensures a firm, sliceable result. The cake requires no baking time and is therefore ready in no time.

Here's how:
Ingredients:
- 150 g butter biscuits (reduced sugar or sugar-free)
- 60 g butter
- 500 g low-fat quark
- 150 g cream cheese
- 50 g erythritol or agave syrup
- 20 g fish gelatine (4 tsp)
- 400 g fresh strawberries
Base:
- Line the base of a 20-cm springform tin with cling film.
- Crush the butter biscuits in a bag into fine crumbs.
- Heat the butter briefly in the microwave until it is liquid.
- Mix the butter with the biscuit crumbs and put this into the springform tin. 5. Press the biscuit base down firmly and place the springform tin briefly in the freezer.
Filling:
- Meanwhile, mix the low-fat quark, cream cheese and erythritol in a bowl.
- Wash the strawberries and cut them into quarters.
- Stir 15 g of the gelatine into about 50 ml of hot water until it becomes liquid.
- If it becomes too thick, briefly heat the gelatine in the microwave until it has dissolved.
- Pour the gelatine into the filling while stirring constantly, and spread it over the cake base.
- Press some strawberry pieces into the filling and arrange the rest on top. Optional: mix 5 g gelatine with a little hot water and use it as a glaze over the cake.
- After 3–4 hours in the fridge the healthy cake will be firm enough to slice and ready to serve!
