Information about Enzymformel Pro
Enzymformel Pro contains a balanced blend of different enzyme types, including those that break down carbohydrates, proteins and fats. The product includes an enzyme complex (BioCore® Optimum Complete), which is supplemented by a specialised gluten‑digesting enzyme marketed under the brand name Tolerase® G. Gluten, a protein that naturally occurs in certain cereals such as wheat, rye and barley. Due to its high proline content, gluten can be difficult to break down. Enzymformel Pro is suitable for vegetarians and vegans and can be taken with any meal.
What are enzymes?
The term enzyme derives from the Greek „enzymos“ and means “in yeast”. An enzyme is a protein that can catalyse a specific chemical reaction without being consumed or having its structure altered. It is capable of breaking certain substances — for example those found in foods — down into smaller components. The activity of each enzyme reaches its optimum at a specific pH and temperature.
Which enzymes are included?
Enzymformel Pro contains several enzymes that fulfil different functions. The following table provides an overview.

Enzyme activity
For enzymes, amounts are usually not stated in milligrams or grams but as a specific enzyme activity. So it is not the weight of an enzyme that matters, but how well and how quickly it can cleave a particular substance. This is expressed as enzyme activity. There are international standards on how to measure the activity of individual enzymes and how it should be declared on the label. The unit varies depending on the enzyme, and the different abbreviations refer to the method by which the enzyme activity of the respective enzyme is determined. One example is the DU (Dextrinizing Unit), which indicates how effectively and rapidly this particular amylase breaks starch down into shorter carbohydrate chains (dextrins). A higher stated value corresponds to greater enzyme activity.
How are the enzymes in Enzymformel Pro produced?
Various enzyme types are available on the market. They can be of animal origin, plant‑derived or produced by microorganisms. Both BioCore® Optimum Complete from Deerland and Tolerase® G from DSM are manufactured via a fermentation process using microorganisms (such as yeasts). These microbes are cultured on a growth medium and ferment the nutrients present into enzymes. Microbes have specific preferences for the medium in which they thrive best. Therefore, it is necessary to use a portion of wheat and soy as part of the growth medium during the fermentation process to produce BioCore® Optimum Complete. Manufacturer Deerland carefully filters the enzymes produced after fermentation to remove wheat and soy residues as far as possible. However, a trace amount may remain in the final product, which is why this is declared on the label.
