Information about Enzymformel Pro
Enzyme Formula Pro contains a balanced blend
of various types of enzymes, including those that break down carbohydrates,
proteins and fats. The product contains an
enzyme complex (BioCore® Optimum Complete), which is supplemented by a special
gluten-cleaving enzyme under the brand name Tolerase® G.
Gluten is a protein found naturally in certain cereals such as
wheat, rye and barley. Due to
its high proline content, gluten can be difficult to break down
. Enzyme Formula Pro is suitable for vegetarians and vegans
and can be taken with any meal.
What are enzymes?
The term ‘enzyme’ derives from the Greek ‘enzymos’ and
means ‘in yeast’. An enzyme is a protein that can
catalyse a specific chemical reaction without being consumed
in the process or altering its structure. It is
capable of breaking down certain substances – such as those found in food
– into smaller components. The
activity of each enzyme reaches its optimum at a specific pH value and
a specific temperature.
Which enzymes are involved?
The Enzymformel Pro contains several enzymes that perform different
functions. The following table provides an
overview.

Enzyme activity
With enzymes, quantities are not usually given in milligrams
or grams, but rather as a specific enzyme activity
. It is therefore not a question of the weight of an enzyme,
but of how effectively and quickly it can break down a particular substance
. This is reflected in the enzyme activity. There are international guidelines on how to measure the activity of
individual enzymes and how this should be stated on the label. The unit of measurement varies depending on
the enzyme, and the different abbreviations refer to the
method used to determine the enzyme activity of the enzyme in question
. One example of this is the DU (Dextrinising Unit),
which indicates how effectively and rapidly this specific amylase breaks down starch
into shorter carbohydrate chains (dextrins). The
enzyme activity increases with the specified value.
How are the enzymes produced in Enzymformel Pro?
There are various types of enzymes available on the market. They may be of animal origin, plant origin or derived from microorganisms. Both BioCore® Optimum Complete from Deerland and Tolerase® G from DSM are produced via a fermentation process using microorganisms (such as yeasts). These microbes are cultivated on a nutrient medium and ferment the nutrients contained therein into enzymes. Microbes have specific preferences for the substrate in which they thrive best. It is therefore necessary, during the fermentation process, to use some of the wheat and soya as components of the culture medium in order to produce BioCore® Optimum Complete. The manufacturer Deerland carefully filters the enzymes produced after fermentation to remove wheat and soya residues as thoroughly as possible. However, a very small amount may remain in the final product, which is why this is stated on the label.
